Halibut With Avocado Pineapple Salsa.
Craig Nassar, "The Practical Chef" cooked halibut, with avocado pineapple salsa.
2 each Avocados diced small
2 cups Pineapple diced fine
1 each Jalapeno minced
1 each Red Onion chopped fine
½ cup Cilantro roughly chopped
¼ cup Fresh Lime Juice (2 limes)
6 each Halibut Fillets (4 to 6 ounces each)
Salt and pepper to taste
Arugula for serving
Heat your broiler.
In a medium bowl, stir together avocados, pineapple, jalapeno, onion, cilantro and lime juice. Season with salt.
Coat a rimmed baking sheet with cooking spray and place fish on baking sheet; season with salt and pepper. Broil until fish is opaque throughout, about 8 minutes. Top fish with salsa and serve with the arugula.
Serves 6
