Black Bean Burgers and Sweet Potato Fries.


1 (15-oz.) can Black Beans, drained and rinsed
1 egg, lightly beaten
1/4 cup breadcrumbs
1/3 cup onion, finely chopped
1/4 cup red bell pepper, finely chopped
1 Tablespoon green chili pepper, finely diced
Salt and pepper, as desired
2 Tablespoons olive oil
4 slices fontina cheese
4 whole-wheat hamburger buns
Lettuce and tomato for garnish
8 bread and butter pickle slices for garnish

Place beans in a medium-size bowl and lightly mash them with a fork until you have a coarse-textured mixture. Add egg and bread crumbs. Mix well. Stir in onion, bell pepper, chili and season with salt and pepper as desired.

Divide mixture into four equal parts, then form by hand into four large flat patties.

Heat oil in a skillet over medium heat. Fry burgers on one side until browned. Turn the burgers over with a wide spatula and place a slice of fontina cheese on top of each patty.

The bean burgers are done when the underside is browned and the cheese is soft.


Sweet Potato Fries
PREP TIME: 5 minutes
COOK TIME: 30 minutes
Serves 4

2 large sweet potatoes
1 tablespoon olive oil
1 teaspoon sea salt

Preheat the oven to 450 degrees.

Carefully cut the potatoes into 1/4″ thin strips, or to your desired thickness and length. Then place in a large bowl, and toss with oil until potatoes are evenly coated.

Then spread out the potatoes evenly on a baking sheet. Try not to overcrowd the sheet, or have multiple layers of fries — you want them to be roasted, not steamed.

Place in oven and cook for 20-25 minutes, turning the fries once or twice during that time to cook evenly. May take more or less time, depending on the size and thickness you cut the fries. Remove once the edges slightly begin to brown and fries begin to crisp.

  1. Although we don't eat alot of beef (maybe once a week), I'm quite sure, my husband would never go for these burgers. I would have a rebellion on my hand if I (or daughter) made them because he isn't a huge fan of beans. However, I do know that the sweet potato fries would be given a huge thumbs-up. My daughter has made some before...deep-frying them. I would be interested in trying your oven-fried kind. How high do you set your oven?

  2. Sometimes Patti, I make both the beef and bean burgers. So everybody is happy. I do not eat red meat at all :)

  3. The only red meat we eat is hamburger...that's because it's the only kind I eat. I hate steak and roast...have ever since I was a kid. My husband and kids like steak, so they often get it when we go out to eat.
