Juice of 2 key limes
1 tablespoon olive oil
2 tablespoons honey
4 thin slices fresh ginger
2 cups strawberries, hulled and chopped
3/4 cup chopped cucumber peeled
3/4 cup papaya, pineapple, chopped
1/2 cup white onion, minced
1 small jalapeƱo pepper, or to taste, minced
In a small saucepan, heat the lime juice, olive oil, honey and ginger. Set aside and cool. Strain the ginger. Mix the cooled honey mixture with the remaining ingredients in a medium bowl. Chill for at least an hour. Makes about 3 cups and can be kept for to 2 days if kept refrigerated.
Two things...first of all, your food photography is awesome!!! My daughter, who is interested in a career as a food writer/critic began a food blog last year. She has since abandoned it because she is not good with the photography aspect of it. She is a fantastic writer, but she wants to include great photos as well, and she doesn't excel at that...yet. So, just letting you know that I think you do great photography.

ReplyDeleteI love the strawberry salsa, with any kind of fish dish.. So, I bet it would be great with tuna..
